Directions
Place an oven rack in the center of your oven. Preheat your oven to 350°F.
Lightly grease a 9×13 inch baking dish with butter or a non-stick spray. Slightly softened butter works best.
Filling
Peel, core, and slice your apples. You’ll want to be consistent here; if the slices are different sizes, they will cook unevenly.
In a large mixing bowl, combine the Spiced Apple Creamed Honey, fall honey, fresh lemon juice, ground cinnamon, nutmeg, ginger, flour, and vanilla extract. Pour in the apple slices and fold gently until they are evenly coated.
Crumble
In a separate medium bowl, combine the granola, flour, baking soda, and a pinch of salt. Pour in the melted unsalted butter. Mix thoroughly until the granola is fully coated and clumping together a bit. Some large clusters, some small. If it isn't clumping enough for you, drizzle in roughly a tbsp of fall honey. Don't overmix, you want a variety of textures.
Pour your apple mixture into your greased baking dish, spreading evenly at first, then mound slightly in the center, this helps distribute heat. Evenly sprinkle the granola topping over the apples, making sure to cover the entire surface. Don’t press the topping down. A light coverage ensures a crispy result.
Place your dish on the center rack and bake for 45-55 minutes, or until the filling is bubbling thickly around the edges and the granola topping is golden brown and crispy. If the topping browns too quickly, loosely tent the dish with aluminum foil for the remaining baking time. To check for doneness, carefully insert a toothpick into the apples; they should be tender but not mushy.
Remove the crumble from the oven and let it cool on a wire rack for at least 20-30 minutes before serving.
